Christmas Cooking- Lebkuchen

As I was planning on posting our favourite recipes anyway I thought I would join in Marilyn's Christmas Cookie Exchange.

These are one of my favourite cookies that a good friend gave me 16 years ago as a Christmas Gift.

We make multiple batches of these. In fact we do 8x the recipe usually (at least)
Lebkuchen Biscuits~

60g butter
2/3 cup golden syrup
1 3/4 plain flour
1 tsp bicarb
1/2 tsp ground ginger
1/2 tsp cardamon
1/2 cinnamon
1/2 tsp ground cloves
1/2 tsp cocoa
1 tbs milk

METHOD:
1: melt butter in medium sized pan
2: add golden syrup, bring to boil then take off heat-stand 10mins
3: Add sifted dry ingredients
4: Add milk and stir until smooth
5: Cover and stand room temp 1 1/2 hrs
6: lightly knead with approx 2 tbs of flour to give coating, sothe dough is not sticky and roll out approx 1/4 inch
7: cut out approx with a 5cm diameter cutter-- we use a heart shape
8: lightly grease tray and place cut out cookie on the tray
9: with a wooden spoon end dent top of heart shape cookie and place a small amount plum jam in centre
10: bake in moderate oven 8-10 mins
11: leave on trays till completely cold approx 30 mins

WE freeze these quite successfully and eat for the first time at our Midnight feast and then after for the 12 days of Christmas.
